I'm looking the UEFI BIOS and its showing their temps at 102 f and 80 + f are these extremely high? Could I have installed the CPU's heatsink fan wrong?

RoSiE, provided those numbers are in Fahrenheit, & not Celsius, you should be fine. If these were in Celsius, your computer would be literally cooking. Most apps displays Celsius by default, unless the user chooses otherwise.
Here's a Fahrenheit to Celsius converter that's easy to use.

If your CPU fan is blowing air down into the CPU heatsink, then it's on correctly.
102F is only slightly higher than human body temperature. CPU chips can run hot enough to give you a serious burn and still run OK.
It sounds like you're well within a good operating range.
Cheers!
